Espresso and Cacao Energy Bites

Ingredients:
16 pitted Medjool dates
100g pecans
1 shot espresso
6 tbsp raw cacao powder
1 tbsp melted coconut oil
2 tbsp maple syrup
Optional toppings- peanut butter, desicated coconut and freeze dried raspberries for decoration
Method:
To a food processor, add pecans and blitz.
Next add the dates and all other ingredients except toppings.
Blitz until it is sticky enough to be molded into balls.
Roll into bite size balls and cover in optional toppings if using.
If using peanut butter, make a thumb sized hole in the energy bite, fill with peanut butter and cover with more mixture as a "lid".
Lay the bites out on to a tray lined with cling film (leave space between them so they don't stick together) and put the tray in the freezer for at least 30 minutes.
I leave them in the freezer and then take out as many as I will want ready for the next day and store these in the fridge - (a good way to ration yourself! 😂)
